Because of all the dark magic he did. It not only ruined his metephorical insides, but also began to ruin his physical body. Considering his link with snakes, it just... made sense that the degradation of his body would make him snake-like.

If I remember correctly, in The Sorceror's Stone, when he was sharing a body with Professor Quirrel, he had a normal nose, and I thought he looked pretty jacked up then. The whole point of Voldemort was for him to look different and reptilian, so the whole no-nose things just adds to it.

The thing about his lack of nose is that when he changed his body into another form it wasn't supposed to be a normal body it was supposed to be mutated. Another reason for this ins his horcruxes each time he made one he became less and less human. His lack of nose is one of the many features that shows his transformation.

Kind of akin to Darth Vader ( though I think Vader is sexy) Anakin Skywalker was good looking until he turned to the dark side, then he became this cyborg-like nightmare to most in the galaxy.
