Good question. It depends did you take it from them while they where polyjuiced or not. If you took it while they where normal you'd be them if you took the hair frome them while theyre useing the potion youll be the one they turned into if that makes sence.
Or at least I think.
Heres another question, what happens if you use your own hair in a polyjuice potion? Does it have no effect or have some weird side effect?

Hm, I think you would experiance the pain and techinally turn, but your outside wouldn't change, because it's your hair. Just a theory.
That is an exelent question.
My answer may be wrong as I am only guessing, however, I'll give it a go.
Lets use examples: if Harry wanted to use polyjuice potion to turn into Ron, and Hermione was using polyjuice potion to turn onto Ron, Harry would take the hair off Ron head and I'm just guessing here, but I think he would turn into Ron because the hairs are technically Rons.
I'm not sure, but let's say Dumbledore took a hair from Snape, who was actually just Flitwick after using polyjuice potion, Dumbledore would still turn into Flitwick. The outside of a person might change, but the brain stays the same, so person's original DNA also doesn't change. ^.^

Since it requires a DNA sample, it can be assumed that the Polyjuice Potion works by replacing the drinkers DNA with that of the sample. It can then be assumed that that persons hair would be the hair of the sample and not his/her own.
i think that if harry for example whated to change into someone that could help him though something to defeat voldemort or something that he would get that porsons hair and but it in the potion and then he would have a sick feeling then change into that porson it will still be him but his looks are different and they can wear off so he would not stay that porson for a long time
